There is no tortilla recipe that can beat the typical potato omelette, but in our wide gastronomy we also have to take into account other types of tortillas that will not leave us indifferent, such as the broad bean omelette with garlic garlic, but we are going to give it an aromatic touch by adding fresh mint.
In this way the omelet gains in taste but also in texture since it is a little more crunchy. It is an easy recipe, with a simple sauté of garlic and green beans before mixing them with the beaten eggs.
This out-of-season recipe can also be prepared with canned broad beans.
Ingredients: 2 people
- 100 g shelled broad beans
- 1 tender garlic or organic garlic
- 5 eggs M
- Oil
- Salt and pepper
- fresh mint leaves
- Chop the garlic into thin slices and the stem into thin slices and sauté in a 22 cm Xtrem frying pan with a little oil.
- Add the beans with a tablespoon of water and let them cook until they are tender.
- Meanwhile, in a bowl, beat the eggs until mixed with a little salt and finely chop the mint leaves.
- Add the beans and garlic to the bowl of beaten eggs with chopped mint.
- Put a little more oil in the same pan and cook the tortilla to taste on both sides.
