Mexican Marinated Rib Tacos

Tacos mexicanos de costilla marinada

Ingredients for 2 people

● 1 clean pork rib

● For the marinade:

○ 1 c/s of concentrated tomato

○ 1 generous splash of Worcestershire sauce

○ 1 c/c grain mustard

○ salt/pepper

○ olive oil

● 2 cloves of garlic

● 1 glass of white wine

● corn tortilla (for tacos)

● To assemble the block:

○ guacamole

○ baby spinach

○ radishes

○ purple onion

○ hot sauce to taste

preparation of the recipe

1. Clean the pork ribs of fat and possible skin.

2. Prepare the marinade by mixing the tomato concentrate, Worcestershire sauce, mustard and olive oil. Season the ribs with salt and pepper and coat them with the marinade. Reserve a few hours at room temperature.

3. In the Presto Monix Pressure Cooker, add a splash of olive oil along with two garlic cloves (just use a knife to break them). Turn the ribs around and place them next to a glass of white wine. Close the pressure cooker.

4. Keep on high heat until the pressure valve rises. Then, keep over medium heat for 30 minutes. Depressurize.

5. Take out the ribs and shred them. Reserve the meat.

6. To prepare the taco, toast the corn tortilla. Put a base of guacamole, baby spinach and the rib meat. Add a few slices of radish and red onion. Finish by drizzling with hot sauce to taste.
