Green soup

Sopa verde

Soups are always comforting, and it is also a natural and healthy way to incorporate vegetables into our diet.

This green soup is a delicious dish with which we are going to add a touch of color to our table and a touch of health to our body.

1 leek

1 onion

3 sticks of celery

1 potato

200g broccoli

100g frozen peas

100g spinach

1 clove garlic

1 1/2 vegetable or meat broth

Fresh parsley



Extra virgin olive oil


  1. We wash the vegetables and chop them.
  2. We peel the potato and cut it into cubes.
  3. Cut the onion into julienne strips, chop the garlic.
  4. We cover the bottom of our high Óptima saucepan with olive oil, heat it and add the onion and garlic. We sauté until softened.
  5. Add the vegetables, sauté for a few minutes and add the broth, parsley, salt and pepper to taste.
  6. Let it cook over medium heat for about 20 minutes, blend and serve.


To accompany our soup we cut a few slices of bread, spread with butter, garlic and bake until golden.

Add some sunflower seeds to give your soup a touch of crunch.
