Kale Soup with Beans

Sopa de Kale con Alubias
Ideal for those cold days or when you need a nutritious dish!

Ingredients:

1 onion
2 cloves of garlic
1 celery branch
1 tbsp cornstarch
2 chopped tomatoes
1 tsp paprika
1 tsp oregano
1 cup chopped kale 400 g beans
1 sweet potato

Steps:

1. Cut the onion and chop the celery
2. Pour a splash of oil into the pot and add the vegetables to fry.
3. We cut the tomatoes and add them along with the rest of the vegetables.
4. When they are poached, add the spices and a tablespoon of cornstarch.
5. Peel and cut the sweet potato. Cut the Kale.
6. Add the above and the vegetables to the pot. Cover with water or broth and let it boil for about 20 minutes.

And that's it! A delicious Kale and Bean soup full of flavor and nutrients.
