Squid stuffed with shrimp

Calamares rellenos con gambas
The touch of lime is wonderful. It's refreshing and adds a flavor that goes very well together. Have you tried it? Maybe you've always made calamari with a different filling and you have another idea.

Ingredients for 2 people:

750 g - 1 kg of squid
2-3 cloves garlic
1 cayenne
1 onion, chopped
350 g of shrimp or prawns in pieces
300 g cherry tomatoes
1 glass of white wine or wine and fish broth
Lime zest
A pinch of parsley

We will use:

1 MONIX® TITAN ROCK frying pan with a diameter of 22 cm

Step by step:

1. Clean the squid and remove the tentacles and fins, which you will cut into small pieces. I like to turn the squid over to stuff it. Chop the onion. Set aside.

2. Prepare the pan with EVOO and sauté the garlic, cayenne pepper and onion until transparent.

3. Add the chopped squid. When ready, add the shrimp and a little salt and cook. Allow the broth to reduce and set aside.

4. Fill the squid with the mixture, placing a toothpick to close them so that the contents do not come out.

5. In a frying pan with a little oil, cook the stuffed squid, turning it over and over.

6. Add the halved tomatoes and allow them to soften. When they are ready, add wine and allow to evaporate, pour in some fish stock and let simmer until they are well done. About 15-20 minutes.

7. Add lime zest and a little chopped parsley on top and eat.
