cauliflower soup

A creamy, light and comforting soup for the cold days ahead. An ideal first course for everyday lunches and dinners or with a special touch.


  • 1 onion
  • 5-6 mushrooms
  • 1 large or 2 medium potatoes
  • 1/2 cauliflower
  • 750 ml vegetable broth
  • 400 ml coconut cream
  • cumin
  • nutmeg
  • pepper
  • chili or a pinch of chilli (to taste)
  • salt
  • margarine or EVOO


  1. Chop the onion and cut the mushrooms into small pieces.
  2. We add margarine to the pot and when it is hot we add the onion.
  3. When the onion is golden brown, add the mushrooms and spices and let them fry for a few minutes.
  4. While we peel and cut the potatoes into square pieces. We add the potatoes to seal them. We raise the heat a little to give it a more roasted touch. We remove
  5. We add the cauliflower, the broth and the herb and let it boil for approximately 30 minutes. We correct salt.
  6. To enjoy!
