A creamy, light and comforting soup for the cold days ahead. An ideal first course for everyday lunches and dinners or with a special touch.
Ingredients:
- 1 onion
- 5-6 mushrooms
- 1 large or 2 medium potatoes
- 1/2 cauliflower
- 750 ml vegetable broth
- 400 ml coconut cream
- cumin
- nutmeg
- pepper
- chili or a pinch of chilli (to taste)
- salt
- margarine or EVOO
Steps:
- Chop the onion and cut the mushrooms into small pieces.
- We add margarine to the pot and when it is hot we add the onion.
- When the onion is golden brown, add the mushrooms and spices and let them fry for a few minutes.
- While we peel and cut the potatoes into square pieces. We add the potatoes to seal them. We raise the heat a little to give it a more roasted touch. We remove
- We add the cauliflower, the broth and the herb and let it boil for approximately 30 minutes. We correct salt.
