Salmon with lime potatoes, video recipe

Salmon is a fish that is offered in many preparations. Here we propose a grilled salmon accompanied by some baby potatoes with lime. The acid in the lime helps defat the salmon and make the recipe fresher and more appetizing. Ideal to take to work in a tupperware or to prepare when there is not much time.

Ingredients:
  • 2 boneless salmon loins
  • 2 shallots
  • 1⁄2 lime juice
  • 1⁄2 c/c black pepper
  • 1 glass of white wine
  • 8 baby potatoes peeled and cooked
  • A handful of fresh basil
Preparation:
  1. Peel and chop the shallots as finely as possible. Brown in a Mineral saucepan until caramelized. When the time comes, add the black pepper and white wine. Let the alcohol evaporate for a few minutes.

  2. Once evaporated, add the juice of half a lime and blend the sauce over low heat. Add the cooked potatoes and let the whole thing cook for about 5 minutes. Reserve.
  3. In a large mineral pan , place the two salmon loins, skin side down. When it is golden and crispy, we turn it over and put it in the oven for about 3-5 minutes depending on the thickness.
  4. Remove the salmon loins from the pan and plate them with the cooked potatoes that we had reserved over low heat. Scatter some chopped fresh basil to garnish.
