Beef round in sauce

Redondo de ternera en salsa

The beef round in sauce is one of those so-called “Sunday” recipes, a dish to taste and share with family or friends. It is one of the recipes that is inherited from grandmothers and the preparations usually vary more in the ingredients of the sauce than in the preparation of the recipe itself.

Like any stew, it is better to cook the day before so that the meat is more rested and the sauce has all its flavor and mainly it is also advisable so that the round can cool and it is easier to cut the meat into thin slices.

We can find recipes where the vegetables are passed through a simmer or crushed to make the sauce. We can also leave them as they are and add any type of mushroom at the last minute.

Ingredients: 4 people
  • 1 round of beef weighing 1kg tied
  • Virgin olive oil
  • 2 onion chopped
  • 2 minced garlic
  • 2 large carrots cut into slices
  • 1 sprig of thyme
  • 100g filleted mushrooms
  • 50 ml white wine
  • 25 ml of rancid wine
  • Water
  • Salt and pepper

  1. We put a little virgin olive oil in the Selecta pressure cooker to heat. We brown the meat and seal it on all sides. We withdraw and reserve.
  2. In the same saucepan, sauté the chopped onion and garlic for a few minutes and add the carrot slices and cook them for a couple of minutes.
  3. We add the filleted mushrooms and the two types of wine and let the alcohol evaporate.
  4. We put the meat back into the pot, with the sprig of thyme and water until the meat is almost covered. Add a little salt and pepper and close the pressure cooker.
  5. When the pot reaches pressure 2 (two marker rings) we lower the heat to minimum and cook for 40 minutes.
  6. Release the pressure and remove the meat to cool. Once cold, cut it into thin slices and put it back in the pot with the sauce.
  7. Let everything boil for about 10-15 minutes with the pot uncovered so that the meat is tender and melty.

Note:

If you want a thicker sauce at the last minute, add the measure of a small glass of water with a dessert spoon of cornstarch.

As a garnish you can add some cubes of fried potatoes or mashed potatoes.
