Garlic soup

Sopa de ajo

This garlic soup is a traditional recipe that comes to us from our grandmothers and mothers. In most homes these dishes were eaten to combat the cold and of course to take advantage of those leftover bread that remained from the previous day.

A humble dish but one that we love.

Ingredients:

  • 15 slices of day-old bread (not too thick)
  • 10-12 cloves of garlic
  • 1 bay leaf
  • 2l. meat broth
  • 1 heaping tablespoon of sweet or hot paprika
  • 75ml extra virgin olive oil
  • Salt

Preparation:

  1. We put our Optima 22cm saucepan on the heat. With the olive oil, we heat.
  2. Once hot, add the sliced ​​garlic and brown, being careful not to burn it. We take out and reserve.
  3. In that same oil, add the bread cut into thin slices and brown. Once ready, add the garlic, remove from the heat and add the paprika. We sauté so that it mixes well and put it back on the heat.
  4. We add the broth, salt, bay leaf and stir a little. We let it cook over very low heat for about 15 minutes.
  5. Once ready, we cut another slice of bread and put it on top so that it soaks.
  6. We serve and enjoy.
  7. One option is to add an egg at the end of cooking to cook with the residual heat (you can add as many eggs as there are diners).
