Nougat ice cream

Helado de turrón

After Christmas we always have some tablets of Jijona nougat or soft nougat as it is usually known. Sometimes we don't know what to do with it, so today we bring you an easy recipe to take advantage of it so you can enjoy this delicious and creamy ice cream.


  • 1 tablet of Jijona nougat
  • 25g sugar
  • 40g honey
  • 100ml whole milk
  • 400g whipping cream 35% fat
  • 4 egg yolks
  • Skin of a lemon

  1. We put our 20cm Mineral saucepan on the fire. Add the milk and lemon peel and let it boil for a few minutes to infuse. We remove the lemon peel and add the chopped nougat, 200g. of cream and honey. We let it melt little by little and mix everything until it forms a light cream. We remove from the heat and let it cool.
  2. In a bowl we put the yolks and sugar and beat until they double in volume.
  3. Add the nougat mixture to the yolks and mix.
  4. In another bowl we whip the rest of the cream, once ready we add it to the nougat mixture with enveloping movements.
  5. We transfer the ice cream to a glass container with a lid and place it in the freezer.
  6. Every half hour we take it out and mix again with a whisk to prevent crystals from forming. We will perform this operation 4-5 times, once this time has passed we will let it freeze completely.
  7. After 24 hours, we take it out a few minutes before consuming and serve it in glasses.
  8. We decorate with chopped almonds and enjoy our nougat ice cream.
