Pasta con espinacas y tomate

These types of pasta recipes are so easy that when you prepare them they brighten anyone's day whether you like to cook or not because of how quickly they are prepared. Simple ingredients and very few steps will mean that you will prepare this dish many times a year.

Ingredients: 4 people
  • 1 package of spirals, macaroni or pasta of your choice
  • 1 chopped onion
  • 12 cherry tomatoes
  • 4 tablespoons fried tomato
  • 1 bag of baby spinach
  • Salt
  • Pepper
  • Oil
  • 3-4 sprigs of thyme
  • 6-7 fresh basil leaves

  1. Bring plenty of salted water to boil in the 22cm Optima pot . When it starts to boil, cook the pasta for the time indicated by the manufacturer. When it is cooked, drain (reserve a little of the cooking water) and set aside.
  2. Put a little oil and the finely chopped onion in the low 24 cm Mineral saucepan and let it cook until it has a light toasted color. Add the cherry tomatoes cut into quarters and the thyme branches, let it cook with the onion for about 10 minutes over medium heat.
  3. Add the fried tomato and continue cooking for another 5 minutes and add 3-4 basil leaves and the entire bag of spinach. Season with salt and pepper to taste and let the spinach simmer a little before finally adding the boiled pasta and the reserved cooking water.
  4. Mix everything and decorate with the rest of the basil leaves.
  5. If you like gratin pasta, you just have to add the grated cheese and broil in the oven for a few minutes.
