Ingredients:

For the crispy breadcrumbs:
• 1 tablespoon of butter
• ½ cup breadcrumbs
• Lemon zest

For the pasta and sauce:
• 200 g of pasta
• 2 tablespoons of butter
• minced garlic cloves
• 1 cup of olives
• ½ cup parmesan cheese
• Zest of ½ lemon
• Juice of 1 lemon
• ½ cup fresh parsley
• 1 cup basil leaves
• Salt and black pepper to taste
•Extra virgin olive oil

Preparation:

1. Prepare the crispy breadcrumbs: In a frying pan, melt the butter and add the breadcrumbs. Stir constantly until golden (1-2 minutes). Remove from the heat and mix with the lemon zest, a pinch of salt and black pepper. Set aside.

2. Boil the pasta: Bring a large pot of salted water to a boil.

3. Prepare the sauce: In the same pan used for the breadcrumbs, heat olive oil and butter over medium heat. Add the garlic and sauté for 30 seconds. Add the olives and cook for 2-3 more minutes, stirring constantly to prevent the garlic from burning. Season with salt and pepper to taste and set aside.

4. Cook the pasta: Once the water is boiling, add the pasta and cook until al dente. Before draining, reserve ½ cup of the cooking water.

5. Blend flavors: Return the pasta to the pan with the olive mixture, add the reserved water and Parmesan cheese. Blend until you have a creamy sauce. Stir in half of the toasted breadcrumbs, lemon zest and juice, parsley and basil. Stir well.

6. Serve: Plate the pasta and sprinkle with the remaining crispy breadcrumbs, more Parmesan cheese and fresh herbs to taste.
