Broccoli with spiced potatoes and chickpeas

Brócoli con patatas y garbanzos especiados

If you're looking for a healthy, easy and flavourful recipe, this dish is perfect for you. Broccoli and potatoes combine perfectly with spiced chickpeas, creating a delicious and nutritious mix. Ideal as a main dish or a side dish!

Ingredients (4 people):
• 1 large broccoli
• 4 medium potatoes
• 200 g of cooked chickpeas
• 100gr of quinoa
• 2 teaspoons ground cumin
• 1 teaspoon of turmeric
• 1/2 teaspoon smoked paprika (optional)
• 1/4 teaspoon black pepper
• 1 clove of minced garlic
• Extra virgin olive oil
• Salt to taste


Steps:
1. Peel the potatoes and cut them into medium-sized pieces. Steam or boil the potatoes and broccoli in boiling salted water until tender (10-12 minutes).
2. Meanwhile, in the Denmark collection cookware from Monix , heat a little olive oil and fry the chopped garlic until golden.
3. Add the cooked chickpeas to the pan and sprinkle with cumin, turmeric, paprika, black pepper and a pinch of salt. Stir well and cook for 5 minutes to allow the flavours to blend.
4. Add the cooked potatoes and broccoli to the pan with the spiced chickpeas. Stir carefully to avoid breaking up the vegetables. Cook for a couple more minutes over low heat.
5. Serve hot as a main dish or side dish.
