Chickpea farinata with vegetables

Farinata de garbanzo con verduras

Crispy on the outside, creamy on the inside and with an irresistible aromatic touch. Ideal for a healthy snack or a light dinner!

Ingredients:

• 150 g chickpea flour
• 400 ml of water
• 80 ml of olive oil
• Vegetables to taste (peppers, onion, zucchini...)
• Salt and pepper
• Rosemary, thyme or other herbs

Step by step:

1. Mix chickpea flour, water and oil. Let it sit for at least 30 minutes (or overnight for more flavor!).
2. Remove any foam that forms on the surface
3. Heat a little oil in a frying pan and pour the mixture.
4. Add the chopped vegetables and cook over low heat. Cover and let it cook slowly.
5. When it is golden and firm, it is ready to enjoy!

Tip: You can make it thinner for extra crispy or thicker for a juicy interior.
