Quinoa paella is a healthy and tasty option to enjoy a traditional dish with a modern touch. In this recipe, we combine quinoa with peas, cauliflower, mushrooms, onion and other fresh ingredients to create a paella full of flavor and texture.
- 100 g of peas
- 200 g cauliflower
- 4/5 portobello mushrooms
- 1/2 onion
- Crushed tomato
- 1 clove garlic
- 180 g of quinoa
- 600 ml vegetable broth
- Saffron
Steps:
- In a paella pan, heat a little oil and add the chopped onion and chopped garlic. Sauté until golden brown.
- Add the sliced portobello mushrooms and cook until tender.
- Add the cauliflower in small pieces and the peas. Cook for a few minutes until the vegetables are lightly browned.
- Add the crushed tomato. Mix all ingredients well.
- Pour the vegetable broth into the paella pan and make sure it covers all the ingredients.
- Add the saffron and quinoa.
- Cook over medium-high heat until boiling. Then, reduce the heat to low and cover the paella pan. Cook for about 15-20 minutes or until the quinoa is cooked and the liquid has been absorbed.
- Remove the paella pan from the heat and let it rest for a few minutes before serving.
