Quinoa paella is a healthy and tasty option to enjoy a traditional dish with a modern touch. In this recipe, we combine quinoa with peas, cauliflower, mushrooms, onion and other fresh ingredients to create a paella full of flavor and texture.

  • 100 g of peas
  • 200 g cauliflower
  • 4/5 portobello mushrooms
  • 1/2 onion
  • Crushed tomato
  • 1 clove garlic
  • 180 g of quinoa
  • 600 ml vegetable broth
  • Saffron


  1. In a paella pan, heat a little oil and add the chopped onion and chopped garlic. Sauté until golden brown.
  2. Add the sliced ​​portobello mushrooms and cook until tender.
  3. Add the cauliflower in small pieces and the peas. Cook for a few minutes until the vegetables are lightly browned.
  4. Add the crushed tomato. Mix all ingredients well.
  5. Pour the vegetable broth into the paella pan and make sure it covers all the ingredients.
  6. Add the saffron and quinoa.
  7. Cook over medium-high heat until boiling. Then, reduce the heat to low and cover the paella pan. Cook for about 15-20 minutes or until the quinoa is cooked and the liquid has been absorbed.
  8. Remove the paella pan from the heat and let it rest for a few minutes before serving.
