This fish recipe is so simple that you can prepare it daily and you can even put it on the celebration table or on special dates.
The dish in question is hake with mushrooms and shrimp with a very mild sauce made with fish broth and the same juices from the sauce.
Hake is a very soft fish with a very fine and pleasant texture. The shrimp will add the power that the hake needs and the mushrooms will provide more texture.
Ingredients:
600 gr hake fillets
250 g of peeled shrimp
150 g of mushrooms, mushrooms, chanterelles, etc.
1 onion
½ leek
1 garlic
1 small carrot
1 sprig of fresh thyme.
100 ml white wine
250 ml fish broth
Parsley or chives
Flour
Oil
Salt
Pepper
Preparation:
Clean the fish and cut into supremes.
We season with salt and pepper, lightly flour them and brown them with a little oil in the low 24cm saucepan, turning them over and over.
Take out the fish and sauté the prawns in the same oil for a minute and set aside.
Peel and julienne the onion. Cut the carrot into a stick shape and the leek into thin slices. We slice the garlic.
In the same saucepan, sauté all the vegetables for about 6 minutes with a little salt and thyme.
Add the cleaned and cut mushrooms, season and fry for 5 minutes.
Add a tablespoon of flour and fry for 2 minutes, stirring.
Pour in the white wine and when it evaporates add the broth.
When it comes to a boil again, add the fish and prawns and let everything cook for two minutes.
Before serving, sprinkle with chopped parsley or chives.
