One Pot CousCous
Today we bring you an option that will allow you to prepare a delicious and balanced meal in a very short time. It will become one of your favorites for its simplicity and richness of flavors. Dare to try it!

Ingredients:

1 handful of basil
1 handful of parsley
1 red onion
A handful of dried tomatoes
1/2 eggplant
1/2 red pepper
1 cup of chickpeas
A handful of almonds
200 gr Couscous
200 ml of vegetable broth
Salt and pepper
Lemon (optional)

Steps:

1. Cut the vegetables to taste.
2. We start by sautéing the onion and add the rest of the vegetables.
3. When they are tender, add the chickpeas, the chopped almonds and the dehydrated tomatoes and season with salt and pepper.
4. Add the couscous, turn it over and add the water.
5. Once the couscous is cooked, add the basil, chopped parsley and the juice of a lemon (optional)
6. Stir and enjoy!
