Quinoa salad with mushrooms and spinach

Ensalada de Quinoa con setas y espinacas
This dish is ideal for those looking for a healthy and delicious option, a sustainable and natural source of energy. Perfect for any occasion, either as a side dish or as a main dish.

INGREDIENTS:

150 gr of Quinoa
200 gr Oyster mushrooms
Spinach
2 cloves of garlic
1 red onion
1 glass of peas
Parsley or cilantro
Raisins
Pistachios
Juice of 1/2 lemon

STEPS:

1. Wash and boil the quinoa. (Strain the quinoa and let it rest/cool depending on whether you prefer to eat it warm or cold)
2. Chop the garlic and cut the oyster mushrooms and onion into strips.
3. Add the garlic with a little oil to the wok. When it is golden, add the peas and mushrooms.
4. Once cooked, add the spinach and sauté for a few minutes.
5. Chop parsley and cilantro
6. Mix the cooked vegetables with the raw onion, quinoa, parsley, raisins and pistachios.
7. Add the lemon and stir.
8. Enjoy!
