Guisantes con cebolla y tocino

This recipe for peas with Iberian bacon can be a good starter to enjoy for as long as we have fresh peas, although it is not entirely necessary since nowadays you can buy frozen peas of very good quality to enjoy all year round. Delicious and nutritious dish of peas with Iberian bacon, a dish that we will make in a few minutes and without complicating things in the kitchen.

Ingredients:

1Kg fresh or frozen peeled peas

120 gr of Iberian bacon

1 leek

1 garlic Parsley, chopped

50 ml dry sherry

Olive oil

Salt and pepper

Preparation:

We can start by blanching the peas if they are fresh for two minutes in boiling water, drain and set aside. If the peas are frozen, you will only have to boil them for the time indicated by the manufacturer and set aside. Heat the 28 cm mineral frying pan with very little oil and brown the Iberian bacon cut into small strips over medium heat. Meanwhile, finely chop the leek and add the bacon until lightly golden. Season with salt and pepper and add the chopped garlic and parsley and continue sautéing for a few more minutes. Add the sherry and let it reduce completely. Add the peas, mix everything well and let it cook for two more minutes so that they finish absorbing the good flavor of the bacon. Serve immediately so they don't lose their green color.
