The most cooked noodles are casserole noodles. They are normally cooked with sausages and pork ribs and a good sauce, but they can also be prepared in a vegetarian version with a simple sauce and replacing the meat with pumpkin. A delicious and very simple recipe suitable for vegans or the whole family.
Ingredients
For 4 people:
250 g of noodles number 4
½ green pepper
1 onion finely chopped
¼ finely chopped leek
300 g of peeled pumpkin
2 cloves of garlic
3 grated tomatoes or homemade fried tomato
1l vegetable broth
Oil Salt and pepper
Preparation:
Cut the pumpkin into small cubes and fry with a little oil in the high Mineral saucepan until golden brown and set aside.
Peel and finely chop the onion and leek, fry with a little more oil in the same saucepan for 5 minutes, add a little salt so that the onion sweats and add the chopped pepper.
After another 5 minutes, add the fried or grated tomato and let the sauce concentrate for about 10 minutes.
Add the reserved pumpkin again, mix well and add the vegetable broth. When it starts to boil, add the noodles and cook according to the manufacturer's instructions.
Adjust salt if necessary.
