Spinach is one of the vegetables that is delicious cooked in any way. Cooked in cream is one of the ways that everyone usually likes.
You can prepare this recipe with fresh, previously blanched spinach or with baby spinach, they are so tender that you can cook them directly from the pan in a few minutes.
Creamed spinach combines with many ingredients, eggs, fish, chicken, etc. You can serve them as a first course decorated with a melted cheese cracker, or depending on the occasion as a garnish for fish or meat. They have an intense flavor but they are also very soft and we will add the point of creaminess at the last moment by adding a little cream cheese.
They can also be used to prepare other recipes such as quiche, stuffed dumplings, lasagna or vegetable cakes.
Ingredients for 4-6 people

Ingredients:
1,300 g baby spinach
40 g of butter or you can also use olive oil
Salt and pepper
2 tablespoons plain flour
1 clove garlic
250ml milk
A handful of pine nuts
1 pinch of nutmeg
2 tablespoons cream cheese
For the cheese cracker:
150 g of grated cheese
Preparation:
In a 28 cm frying pan, melt the butter or oil together with the chopped garlic, lightly brown and add the pine nuts and spinach, season with salt and pepper and sauté everything over high heat for about 3-4 minutes so that the moisture released by the pine nuts evaporates. spinach.
Next, we sprinkle two tablespoons of flour on top of the spinach and stir so that it is well integrated. We lower the heat and let the flour cook for a couple of minutes.
We add the nutmeg and we will add the milk little by little, first a couple of tablespoons, stirring constantly, we continue adding more milk when we see that the spinach begins to thicken until it is all incorporated. We will let the spinach cook over low heat without stopping stirring for around 10 minutes.
At the last moment we add the cream cheese and mix so that it is well integrated.
To make the cheese crackers, heat a 20 cm paella pan. We put a bunch of grated cheese without any oil and flatten them with the spatula, giving them a circle shape. To shape the cookie into a circle, you can also use a plating ring and put the grated cheese inside.
Let the cheese melt for about 3-4 minutes so that it browns, turn it over so that it cooks on the other side and leave for another 3-4 minutes.
Serve the cream with a cheese biscuit in the center.
