Ingredients:
300-350 g spaghetti
1 chive
20 rice shrimp
6 shrimp
100-120 g grated parmigiano reggiano
6 egg yolks
Salt and pepper to taste


Step by Step:

1.- Chop the spring onion and sauté with a little oil in the pan.
2.- Peel the shrimp and prawns. Pour the bodies over the poached onion until golden.
3.- Cook the pasta in plenty of boiling salted water for the time indicated by the manufacturer and while mixing the egg yolks with the grated Parmesan and a pinch of pepper.
4.- Drain the pasta, reserving part of the water to add to the carbonara and make it more liquid and creamy. Pour the pasta over the sauce and stir.
5.- Add the carbonara and 1 or 2 ladles of water until you have a creamy sauce to your liking.
6.- Sprinkle with chopped parsley and serve immediately.
