German style potato salad

Ensalada de patatas estilo alemana

Bratkartofflen or German potato salad has three ingredients that define it:
potatoes, bacon and onion, although in reality there is no single recipe for this delicious
recipe from Germany. It is also an excellent garnish to accompany a barbecue.


Difficulty: easy
For: 4 people
Time: 40 minutes


Ingredients:
4-5 medium potatoes
120 gr of bacon
1 medium onion.
Salt and pepper
Olive oil
Fresh parsley
Sage
Thyme


Preparation:
Cook the potatoes in your tall pot with plenty of water for around 20 minutes, depending
of the size.
Once cooked, peel and cut into slices of approximately half a cm.
Cut the bacon into strips and finely chop the onion.
In a frying pan, cook the bacon strips over medium heat. When they are done, remove
absorbent paper and in the same oil sauté the chopped onion.
When the onion is transparent, remove and add to the bacon strips.
In the same pan, add a drizzle of oil and when it is hot, add the oil in batches.

Turn the sheets over so that they brown on both sides and try not to pile them all up.
