Lentil salad with cold steamed chicken

Lentils, like the rest of the legumes, also have a place in summer and the best way to dress them is with delicious and fresh salads.

Lentils, in addition to being very tasty, provide a lot of nutrients, they are rich in minerals such as iron and calcium, very appropriate in the diet of the whole family.

In a very complete salad with simple ingredients and comes accompanied by steamed chicken breast, without any type of fat and cooked in a very healthy way.

You can also leave it prepared in advance and stored in the refrigerator for when you get home from work or to take in a tupperware to the beach, etc.

Ingredients: 4 people
  • 300 g skinless chicken breast
  • 1 carrot
  • 1 onion
  • 1 parsnip
  • 1 handful of cherry tomatoes
  • 500-600 g cooked lentils
  • 4 fresh mint leaves
  • 1 handful of raisins
  • 1 handful of croutons
  • Pipes to taste
  • 2 hard-boiled eggs
  • Virgin olive oil
  • 1c.p grated ginger
  • 2 tbsp balsamic vinegar
  • Salt and pepper
  • 1 tbsp honey mustard or 1 tbsp mild mustard
  • 1⁄2 tbsp honey
To cook the chicken breasts:
  • 1⁄2 l of water
  • 1c.p dehydrated onion
  • 1c.p dehydrated chives
  • Salt and pepper
  1. To cook the breasts, we will heat the water with the onion and dehydrated chives in the low Óptima saucepan .
  2. We season the chicken breasts with salt and pepper, they can also be seasoned with some aromatics and we put them inside the 24 cm draining basket , fit on top of the saucepan and cover.
  3. We let the breasts cook for around 20 minutes, depending on the size.
  4. Meanwhile, finely chop the onion, carrot, tomatoes, parsnip, and mint and put everything in a bowl with the cooked lentils. We mix well.
  5. We make the vinaigrette and emulsify all the ingredients well.
  6. When the chicken breasts are cold they can be filleted or diced.
  7. Serve the lentil salad in bowls or deep plates with a few raisins, bread croutons, seeds to taste, chopped eggs and filleted chicken breast.
  8. Dress with the vinaigrette.
