Pickled chicken breasts

Pechugas de pollo en escabeche

The recipe for pickles comes from a long time ago due to the need they once had to preserve food. There are countless ways to prepare the pickle, today we bring you these pickled chicken breasts that are quick, simple and you will get a wonderful result.


  • 2 chicken breasts
  • 250ml extra virgin olive oil
  • 250ml wine vinegar
  • 2 sweet onions
  • 1 leek
  • 1/2 head of garlic
  • 2 tablespoons black pepper
  • Salt
  • 150ml of water
  • 3-4 bay leaves
  • 5 carrots


  1. We cut the leek, the onion into julienne strips and the carrot into red strips.
  2. We give the garlic cloves a little hit and that's it (we don't peel).
  3. We put our Optima 22cm saucepan . Heat the oil over the heat and add the breasts. We brown on the outside.
  4. Add the vegetables, pepper, salt and bay leaf. We sauté and poach.
  5. Add the vinegar and water and let it cook over medium-low heat until it reduces. More or less 30-40 minutes.
  6. Once ready, let it cool and store in the refrigerator.
  7. This type of dish is much better the next day, so you have to wait a little to enjoy it
