Couscous with chicken and vegetables

Cuscús con pollo y verduras

Cous cous is one of those dishes that takes longer to think about the ingredients than to prepare. It is a traditional Moroccan dish, although I have to tell you that it has variations, they make it with lamb and this one is prepared with chicken which is a little faster. Even with this caveat, this vegetable and chicken cous cous gives off the typical aromas so characteristic of this area.

Ingredients:

  • 1/2 breast
  • 50g raisins
  • 1 onion
  • 150g pumpkin
  • 2 carrots
  • 1 small zucchini
  • 2 tomatoes
  • 1 teaspoon Ras el Hanout
  • 1 teaspoon turmeric
  • fresh cilantro
  • 1/2 teaspoon ground cinnamon
  • Salt
  • Ground pepper
  • 100ml extra virgin olive oil
  • 400 chicken broth
  • 2 cups of couscous

  1. We cut the chicken into strips.
  2. We soak the raisins.
  3. We cut the vegetables into not too small cubes.
  4. We put the olive oil in our frying pan, for this recipe I have used the 28cm XTREM frying pan , we heat it, add the chicken and sauté until golden. We take out and reserve.
  5. In that same oil we sauté the onion until it is soft, then add the rest of the vegetables and sauté for a few minutes.
  6. Add the chicken, drained raisins, spices, cilantro and chicken broth. We leave it on low heat for about 10 minutes. We check and stir from time to time, making sure it doesn't run out of broth. It should be consumed but not completely, if you think it needs it, add a little more, to make it juicy.
  7. Meanwhile we prepare the cous cous, to do this we boil 2 and a half cups of salted water. Once it starts to boil, add the couscous and cover for 5 minutes. Once this time has passed, we transfer to a bowl and add a splash of olive oil to separate the grains and set aside.
  8. When our chicken with vegetables is ready, we serve on top of or next to the cous cous and decorate with fresh cilantro.
