Ingredients:
1 red onion.
2 cloves of garlic.
400 g of chickpeas.
1 can chopped tomato.
200 g fresh spinach.
1 tsp cumin.
1 tsp ginger.
1 tbsp curry.
400 ml of coconut cream.
Steps:
1. Finely chop the onion and garlic, we can also chop it if we like it finely
2. When it is golden, add the spices and sauté them slightly.
3. Add the crushed tomatoes and cook over medium heat until the tomato is well cooked.
4. Add the chickpeas and sauté for a few minutes.
5. Add the coconut cream and spinach and let it cook for about 15 minutes.
6. We serve with rice, pasta or whatever we prefer and enjoy!
