Onion and garlic soup

Sopa de cebolla y ajo
A traditional soup that takes away all the sorrows, and that feels great for the cold winter weather. It is perfect for dinner or lunch, and while you cook it, the house is filled with that smell that reminds us so much of our mothers and grandmothers cooking over low heat.

INGREDIENTS:

3 onions
1 head of garlic
1 glass of white (or red) wine
1l Vegetable Broth
2 bay leaves
A few sprigs of fresh thyme
1 tbsp cornstarch
Salt and pepper
EVOO
Bread (optional)
Cheese (optional)

STEPS:

1. We slice or chop the onions and garlic
2. With a base of oil we add the vegetables and let them cook until transparent.
3. Add the wine, thyme and bay leaf and let it sauté until the onion is golden.
4. Add the cornstarch and stir, and add the vegetable broth, salt and pepper. We let it boil for about 20-25 min.
5. We toast bread and add the cheese to melt it
6. Enjoy!
