This vegetable coca is totally vegetarian, very healthy and easy to prepare. We are going to find the trick in the dough, we are going to prepare it with beer so that it has a very crispy base and does not need any rising time. You can put the vegetables that you like the most and as a final touch add some olives, although this dough allows the ingredients you want if you like them a little more complete.
Ingredients: for 8 people (two cokes come out)
For the mass:- 300 g strong flour
- 100 ml olive oil
- 100 ml of beer
- 7 g dry baker's yeast
- 1 dessert spoon of salt
- 150 g zucchini cut into small cubes
- 150 g eggplant, cut into small cubes
- 150 g red pepper, chopped into small cubes
- 150 g green pepper, chopped into small cubes
- 1 chopped onion
- 6 cherry tomatoes cut into quarters
- Olive oil
- Salt and pepper
- 1 tablespoon of sweet paprika.
- Preheat the oven to 225ºC.
- In a bowl, mix the oil and beer and add the yeast, mix until it dissolves. In the bowl of the mixer, put the flour and salt and add the oil, beer and yeast mixture and mix with the hook until the dough is ready.
- Put the dough on a floured surface and knead until it forms a ball. Spread the dough with the help of a rolling pin and form a rectangle the size of the 40 cm Magma oven -safe griddle. Line the griddle with baking paper and put the dough on it.
- In a bowl, put all the chopped vegetables (except the cherry tomatoes) along with the oil to taste, salt and pepper and the sweet paprika, mix well.
- Spread the vegetables over the dough that we have prepared, trying not to leave any gaps, also spread the tomatoes over the dough and put the griddle in the oven.
- Cook the coca for about 25-30 minutes until the dough is crispy and golden.
