This creamy risotto is perfect for cold days.
Ingredients:
1 onion
1/2 red pepper
1 clove of garlic
500 g pumpkin (without skin)
250 g of rice
800 ml of vegetable broth
Saffron
Pine nuts
Parsley
Salt
Pepper
Olive oil

Steps:
- We finely chop the onion, garlic and pepper.
- We add it with a little oil to the pot.
- We cut the pumpkin into small pieces
- We add the pumpkin to the onion once it has been poached.
- We heat the broth in a saucepan
- Add the rice and stir. Gradually add the broth as the rice absorbs it, stirring constantly.
- We sauté some pine nuts and finely chop the parsley.
- We mix it with the rice and enjoy!
- You can add a little parmesan cheese at the end.
