Pumpkin Risotto

Risotto de Calabaza
This creamy risotto is perfect for cold days.

Ingredients:

1 onion
1/2 red pepper
1 clove of garlic
500 g pumpkin (without skin)
250 g of rice
800 ml of vegetable broth
Saffron
Pine nuts
Parsley
Salt
Pepper
Olive oil

Steps:
  1. We finely chop the onion, garlic and pepper.
  2. We add it with a little oil to the pot.
  3. We cut the pumpkin into small pieces
  4. We add the pumpkin to the onion once it has been poached.
  5. We heat the broth in a saucepan
  6. Add the rice and stir. Gradually add the broth as the rice absorbs it, stirring constantly.
  7. We sauté some pine nuts and finely chop the parsley.
  8. We mix it with the rice and enjoy!
  9. You can add a little parmesan cheese at the end.
