Blondie with coffee

Blondie con café

Do you know the blondie? It is an extremely delicious sweet, it is known as the blonde brownie, but it has differences with this one. Blondie doesn't have as much chocolate, its texture is sticky and quite addictive, and the brown sugar is what causes that special flavor.

Ingredients

180g wheat flour

1 teaspoon baking powder

1 egg

220g brown sugar or panela

170g unsalted butter

1 pinch of salt

25ml of coffee

1 teaspoon vanilla extract

100g chocolate chips

Elaboration

  1. Preheat oven to 200º.
  2. In our Induction Noir coffee maker we prepare a coffee. We reserve.
  3. In a bowl we mix the flour, baking powder and salt.
  4. In our Diamond saucepan we melt the butter over low heat, once melted we add the sugar and vanilla. We leave it for a while until everything is perfectly mixed (it should not boil, we keep it at very low heat), we remove it from the heat and let it cool down.
  5. Beat the egg and add to the butter mixture.
  6. We add the mixture to the flour and with a spatula we mix until everything is integrated.
  7. Finally we add the chocolate chips.
  8. We line our mold with greaseproof paper to make it easier to unmold after baking.
  9. We pour the mixture and bake for about 20-25 minutes.
  10. We click to check that it is ready and take it out. We give it a few more minutes if it is not ready yet.
  11. We let it cool and unmold.
  12. We decorate with icing sugar and serve hot or cold.

Suggestions

- We can add some dried fruit such as walnuts, pistachios, almonds.

- If you don't have chocolate chips you can use chopped chocolate.
