Rice With Artichokes

Arroz con alcachofas

Now that we have just entered autumn, we bring you a perfect seasonal recipe to savor this season full of browns and oranges. We have prepared it with the Amazon Casserole, ideal for this type of dishes.


200 g of mushrooms

200 g peeled pumpkin

100 g raw chestnuts

1 onion

2 cloves of garlic

2 strands of saffron

1 tsp paprika

1 tsp turmeric

300 gr rice

1'200 L vegetable broth


1. We boil the chestnuts, making a small cut, between 50-60 min

2. Chop the onion and garlic.

3. In our saucepan we sauté the onion and garlic.

4. Add the paprika and stir.

5. We cut the mushrooms and the pumpkin, which we also peel.

6. Add the mushrooms and fry for a couple of minutes over medium heat. We add the pumpkin

7. In a saucepan we put the vegetable broth, turmeric and saffron and heat so that it dissolves well.

8. Sauté the rice a little.

9. Add the broth and let it boil for 18 min.
