We open the kitchen drawers and look for a low casserole to add cold and without salt: 200 g of brown rice, 400 ml of poultry stock (twice as much water as rice), 15 g of thick, unpeeled ginger. , 15 g of soy sauce and 50 g of olive oil.
You turn on the heat and when it starts to boil, you have to cook it very slowly until it is dry. More or less it will be about 20 minutes, although everything will depend on the type of rice you use.
Stir-fried basmati rice recipe with vegetables
Ingredients
- 200 g basmati or brown rice
- 400 ml poultry stock
- 15 g ginger, cut into thick slices and unpeeled
- 15 ml soy sauce
- 50 g olive oil
- 1 bunch of asparagus
- 3 carrots
- 1/2 red pepper
Preparation
In a low non-stick cast aluminum saucepan, add the olive oil, rice, poultry stock, ginger and soy sauce. We put it over medium heat and as soon as it starts to boil we cover it and lower the heat to minimum. Cook until the water has been absorbed (about 20 minutes).
We must keep in mind that if we have used brown rice, we should not salt it as it hardens the skin and takes longer to cook.
Separately, we sauté the following vegetables in order of cooking times: green asparagus, red pepper, carrot... (we can also add mushrooms, garlic, cabbage, spring onion, zucchini... or any vegetable you want). We prevent them from taking on color when sautéing them, we add them to the rice and mix well. Let it cook over low heat until the rice begins to have a dry layer on top.
We can eat it cold as a salad or hot. We dress with a little soy and serve.
