Mashed Potato Christmas Trees: A Festive Treat

Surprise your guests this Christmas with these charming mashed potato trees, a delicious, original and completely vegan option. You can choose between the classic version or the one filled with spinach for an extra touch. Follow these steps to prepare this recipe with utensils from the Monix Elite collection.

Ingredients (for 4 people):

For the puree:

  • 2 potatoes
  • 1 sweet potato
  • 1 medium onion, finely chopped
  • 2 tablespoons fresh parsley, chopped
  • 50 ml of vegetable cream
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

For the spinach filling:

  • 200 g fresh spinach
  • 1 small onion, finely chopped
  • 1 tablespoon cornstarch
  • Salt to taste

Besides:

  • Pastry bag with star shaped nozzle
  • Baking paper

Preparation:

  1. Prepare the puree:
  • Peel the potatoes and sweet potato, cut them into medium-sized pieces and boil them in a Monix Elite saucepan with water and a pinch of salt for 15-20 minutes, or until tender.
  • Meanwhile, sauté the onion in a Monix Elite frying pan with a little olive oil until translucent.
  • Drain the potatoes and sweet potato and mash them together with the sautéed onion, vegetable cream, garlic powder, parsley, salt and pepper. Set aside.
  1. Prepare the spinach filling (optional):
  • In the same pan, sauté the onion over medium heat until golden.
  • Add the spinach and cook until reduced in size.
  • Add the cornstarch to the spinach. Stir until slightly thickened. Adjust salt and remove from heat.
  1. Shape the little trees:
  • Place the puree in a piping bag fitted with a star tip. For the filled version, place a little of the puree in the base, add a teaspoon of the spinach filling and cover with more puree to form a small tree.
  • For the classic version, simply pipe the little trees directly onto a baking sheet lined with baking paper.
  1. Bake and serve:
  • Preheat the oven to 200ºC. Bake the trees for 10-12 minutes, until the edges begin to brown slightly.
  • Remove from the oven and serve warm as an appetizer or side dish.

Presentation tip: Decorate your trees with sesame seeds or red pepper pieces to simulate Christmas decorations.
