Ingredients: For the pancakes:

  • 1 cup of wheat flour
  • 1 cup of milk
  • 2 tablespoons of sugar
  • 1 tablespoon baking powder (Royal type)
  • 1 tablespoon lemon juice (or vinegar as an alternative)
  • Vanilla essence (optional)
  • Cinnamon (optional)
  • Fresh fruit, chocolate, or nuts to decorate (to taste)

For the cranberry sauce:

  • 1 cup frozen blueberries
  • 1 tablespoon sugar or syrup (optional to sweeten)

Steps for pancakes:

  • In a bowl, mix the milk with the lemon juice and let it sit for 10 minutes. This will create a kind of homemade buttermilk.
  • In another bowl, combine the flour, sugar, baking powder, vanilla and cinnamon (if using). Gradually add the milk mixture until you have a smooth dough. Let it rest for 5 minutes.
  • Heat a non-stick pan and brush it with a few drops of oil. Once hot, pour in a little of the batter.
  • Cook the pancakes over medium heat until bubbles appear on the surface. Flip and cook until golden.
  • Serve the pancakes stacked, decorated with fresh fruit, chocolate or nuts to taste.

For the cranberry sauce:

  • In a small saucepan, cook the frozen blueberries with a tablespoon of sugar or syrup.
  • Cook over medium heat until the cranberries break down and you have a thick sauce.
  • Serve hot over pancakes.
