For the cranberry sauce:
- 1 cup frozen blueberries
- 1 tablespoon sugar or syrup (optional to sweeten)
Steps for pancakes:
- In a bowl, mix the milk with the lemon juice and let it sit for 10 minutes. This will create a kind of homemade buttermilk.
- In another bowl, combine the flour, sugar, baking powder, vanilla and cinnamon (if using). Gradually add the milk mixture until you have a smooth dough. Let it rest for 5 minutes.
- Heat a non-stick pan and brush it with a few drops of oil. Once hot, pour in a little of the batter.
- Cook the pancakes over medium heat until bubbles appear on the surface. Flip and cook until golden.
