This soufflé omelet is perfect for brunch, we love these types of recipes, healthy, delicious and perfect to share.

A spongy tortilla that will melt in your mouth, with the option of varying the fillings according to your tastes.

2 eggs



Red onion

Cherry tomatoes

Grilled chicken

Blue cheese


Extra virgin olive oil


  1. Preheat oven to 180º.
  2. In a bowl we put the egg yolks, salt and pepper. We beat until they are creamy.
  3. In another bowl we beat the egg whites, we should achieve firm peaks.
  4. We mix the yolks and whites with enveloping movements.
  5. In our Copper frying pan we put a little oil, heat it, add the mixture and heat it over very low heat until the bottom part sets.
  6. Put in the oven for a few minutes until the top is golden.
  7. We take out and fill, in our case we have used roast chicken that we had from the day before, some slices of red onion, some Cherry tomatoes, blue cheese and fresh thyme.
  8. There are a thousand filling options: smoked ones are great, caramelized onion, roasted vegetables...
