Potato timbale with prawns

Ingredients:
600 g of potatoes
3 carrots
200 grams of canned tuna
3 eggs
200 g cooked prawns, reserving three to decorate each timbale

170 gr of mild mayonnaise.


Preparation:


Peel and chop the potatoes. Cook in plenty of salted water in the Amazonia tall pot for
12 minutes. Drain and mash with a fork with salt, pepper and the knob of butter until
get a mashed potato. Reserve.


Scrape the carrots and cut them into cubes. Cook the potatoes in the same water for about 10
minutes and drain.


Put the cooked carrots with the crumbled tuna in a large bowl.


Also add the olives, drained gherkins and peeled prawns (minus the
reserved) everything chopped and mix. Add two heaped tablespoons of mayonnaise and mix.

Cook the eggs for 10 minutes, once cooled, peel and chop. Reserve


Grease 4 plating rings to form the timbales on the same plates.


Fill the base with two tablespoons of puree, spread a tablespoon of mayonnaise and on top
two tablespoons of filling cover with more puree and mayonnaise. Decorate with the chopped egg and
prawns that are peeled. Sprinkle with chives and remove the plating ring.
