A delicious way to eat salmon is Japanese style, both in sashimi and maki versions. In Japan they usually eat it completely raw seasoned with some soy sauce or wasabi, accompanied by rice or noodles or alone together with other raw fish.
We have chosen to make semi-raw salmon , in a tataki version. Tataki is a way of preparing filleted fish (or meat) previously sautéed on a griddle or pan and marinated in some type of soy, ginger or lemon sauce.
