Spoon dishes are always appealing, they are so comforting that we cannot do without them. Today we bring you a tomato soup, but this time the tomatoes are roasted which gives a very special flavor to this dish.
A simple but undoubtedly perfect soup, in addition to being liked by both adults and children, it is a dish that we can season with the aromatics that we like the most or even add a touch of crunch from fried bread, nuts...
Ingredients:
- 1kg ripe tomatoes
- 1 large onion
- fresh basil
- 2 cloves of garlic
- 500-700ml meat or vegetable broth (vegetarian option)
- Salt
- Pepper
- Extra virgin olive oil
Preparation:
- We preheat the oven to 200ºC.
- We put the whole tomatoes on a tray, drizzle with olive oil, add some basil leaves, the onions and the garlic cloves.
- We bake for approximately 30 minutes.
- We put everything into our 22cm Óptima saucepan , along with the broth, salt, and pepper.
- We let it cook for a few minutes.
- We pass through a food mill to make it finer and remove the tomato skin.
- We serve and decorate with toasted bread and basil.
Note: If you like your soup thicker, do not add all the broth at once. Once you pass the soup through the sieve and see its consistency, add more broth if you wish.
