Today's recipe is inspired by the Middle East, and shakshuka is very similar to Manchego ratatouille but with cumin and spicy paprika. Today we gave it a twist and added feta cheese to make it cheesy and give it a new touch. Do you dare to try it? It is delicious as a garnish for white beans or rice.

Ingredients

  • 1 onion
  • 2 cloves of garlic
  • 1/2 red pepper
  • 400g of chopped tomato
  • 1/2 tsp cumin
  • 1 tsp paprika
  • feta cheese
  • 1/2 Avocado
  • A pinch of chili
  • EVOO and salt

Steps

  1. We cut the onion, garlic and pepper
  2. In the pan, with a little EVOO, sauté the onion with the garlic. When they start to eat some color, we add the pepper.
  3. Add the spices and sauté for a few minutes.
  4. We add the tomato and let it cook for about 10-12 minutes until it is cooked.
  5. To finish, you can add an egg and let it cook or a little feta-style cheese and avocado to give it a different touch.
