This seafood salpicón is a mandatory recipe in every kitchen. A refreshing and very typical recipe for Mediterranean cuisine. There are many salpicón recipes, depending on each person's taste, we have made this one, a classic that we love.
Ingredients:- 250g raw shrimp
- 1-2 cooked octopus legs
- 500g fresh mussels
- 1/2 red pepper
- 1 green pepper
- 1/2 yellow pepper
- 1/2 fresh chive
- 1 tomato or several small ones
- Salt
- Extra virgin olive oil
- Wine vinegar
- We put plenty of water in a 24cm tall Chef saucepan , when it starts to boil we add the prawns and once it boils again we will have it for 3-4 minutes depending on their size. We take it out and put it in a bowl with ice to stop the cooking.
- In another 24cm tall Chef saucepan, add a little water and add the mussels, cover and once they begin to open, remove from the heat.
- Cut the octopus leg into small pieces.
- Chop the peppers, spring onion and tomato.
- In a bowl we place all the chopped ingredients, the peeled prawns, the octopus and the cleaned mussels.
- Add olive oil, vinegar and salt and stir to mix.
- We cool in the refrigerator and serve very chilled.
