Chicken rolls stuffed with basil and cheese

Today we bring you a recipe cooked with chicken in the form of rolls filled with soft cheese and some fresh basil leaves. To make them more sweet, we will water them with apple juice with a little honey. They are prepared in a simple way by browning the rolls a little with the griddle on the stove to finish cooking in the oven. They can be prepared in advance and served with mashed potatoes, sautéed vegetables or mushrooms.

Ingredients:
  • 4 chicken breasts open like a book
  • 4 slices of Dutch cheese
  • Salt and pepper
  • 8 fresh basil leaves
  • Virgin olive oil
  • 4 sprigs of thyme
To pair:
  • 250 ml apple juice
  • 1 tablespoon of honey
  • 1 tablespoon lemon juice

  1. We ask our usual butcher to cut the breasts in the shape of a book or for stuffing, they must be wide open. First of all we are going to season the breasts with salt and pepper on both sides and in the center we will put two strips of cheese and on top of them the fresh basil leaves and roll them up. We tie the rolls with the help of a rope and lightly paint them with virgin olive oil.
  2. Place the rolls on a previously heated Magma oven-safe griddle with a little olive oil and let them brown slightly. Preheat the oven to 210ºC.
  3. In a bowl prepare the sauce with the apple juice, honey and lemon juice.
  4. Brown the rolls on all sides and place a sprig of thyme on top of each one. Pour half of the apple sauce so that the rolls are well coated.
  5. Bake the rolls for 20-25 minutes, halfway through cooking pour the rest of the sauce.
  6. Cut the strings to serve and cut into slices or serve whole, we can accompany it with some sautéed potatoes, salad or basmati rice.
