These Riojan style potatoes are the classic recipe that leaves you speechless. A simple dish, with a humble origin but that without a doubt those who try it repeat it because it is a comforting and delicious dish.

A spoon dish that we love to warm up and that cannot be missing from the table.

Ingredients (4-6 people):
  • 2kg of potatoes
  • 500g chorizo
  • 2 onions
  • 50ml extra virgin olive oil
  • 2-3 chorizo ​​peppers
  • 5 cloves of garlic
  • Meat broth
  • 1 tablespoon sweet paprika
  • Salt
  • 1 bay leaf

  1. The first thing we should do is soak the chorizo ​​peppers so that they hydrate. We put them in a bowl with warm water and leave them for at least 20-30 minutes. Once this time has passed, we remove the pulp and reserve.
  2. We put the oil in our tall Mineral saucepan , heat it and add the very finely chopped onion. Saute until transparent.
  3. Add the chopped chorizo ​​and garlic cloves to the onion. Sauté for a few minutes so that the chorizo ​​releases the fat a little.
  4. We add the paprika, stir everything well so that the flavors mix and not for too long so that it doesn't burn (be careful as it can become bitter if we spend too much time).
  5. Crush the potatoes, add to the sauce, sauté and pour in the meat broth until the potatoes and the pulp of the chorizo ​​peppers are covered. Let's salt.
  6. We put the heat on high until it starts to boil, once it starts we lower the heat to medium and let it cook for about 20-25 minutes depending on the potatoes.
  7. We let them rest for a few minutes and serve.
