Peach jam

Mermelada de melocotón

In our breakfasts and snacks, jam is never missing. Today we bring you the peach one, one of our favorites. We always take the opportunity to make depending on the season, so we will have jams of all flavors all year round. Ahhh and remember that you can use it in your savory dishes, that sweet touch is great for them.


  • 1kg. of ripe peaches (weight already peeled)
  • 500g brown sugar
  • Juice of half a lemon
  • 1 Teaspoon vanilla extract
  • 1/2 teaspoon ground cardamom


  1. Peel the peaches, remove the stone and chop them.
  2. In a large bowl, place the chopped peaches along with the sugar and lemon juice for 12 hours. We stir from time to time and let it marinate.
  3. We put our 26cm Optima high saucepan on the heat, add the peach mixture, add the vanilla essence and cardamom and bring to a boil.
  4. Cook for 20-30 minutes over low heat. With the help of a wooden spoon, we stir and crush the fruit to break it up. If you like to find pieces, skip this step.
  5. Once this time has passed we have to see if the texture is appropriate. Keep in mind that once it cools it thickens. And if you are not sure, put a plate in the freezer for a few minutes, put a spoonful of jam on it once it is cold and if after a few minutes we touch it and it is set, our jam is ready.
  6. We bottle and once cold we put it in the refrigerator.
