Turkish eggs


Haven't you tried it yet? We couldn't pass them up because they look great. Here we do not cook poached eggs, we make a simple recipe and we cook the eggs that we are going to put on a base of poached vegetables and tomato.
Cheese is important. If you like it, be generous. Use shredded mozzarella or provolone cheese. If you are going to grate them at home, cool them well to make it a simple task.

Ingredients for 4 people:
4 large eggs
Extra virgin olive oil
1 red Italian pepper cut into julienne
1 green Italian pepper cut into julienne strips
1 onion cut into julienne
Grated mozzarella or grated provolone cheese
2-3 tomatoes cut into approximately 1 cm slices
1 teaspoon sweet or hot paprika
Salt, black pepper
Chopped parsley

Step by Step:

  1. Cook the eggs in plenty of boiling water for 12 minutes. Remove to a bowl of cold water and let cool before peeling.
  2. Pour a splash of extra virgin olive oil into your frying pan and sauté the vegetables with a pinch of salt until soft over medium heat. You can cover them when they are ready for a couple of minutes.
  3. Pour the grated cheese over the poached vegetables and place the sliced ​​tomatoes on top, let cook for about 10 minutes.
  4. Add the eggs cut into halves with the yolk facing down, sprinkle with paprika and add more grated cheese, cover the pan and let it melt. Ready to serve.
