With the arrival of autumn, stews are becoming more appealing...but look how delicious they are!! The recipe I bring you today, a choco stew with vegetables , is really delicious and comforting. A traditional stew, full of flavors and nuances, that you will surely fall in love with. A simple recipe, accessible to anyone with a simply spectacular result.
Ingredients • A cuttlefish of approximately 1Kg • 1/2Kg of shrimp • 2 carrots • 1 leek • 300g of pumpkin • 1 tomato • 1 onion • 1/2 red pepper • 3 cloves of garlic • 5-6 medium potatoes • Extra virgin olive oil
Elaboration
- We ask our fishmonger to clean the choco perfectly. At home we review and remove all the fabrics that surround it on both sides. We cut it into not too small cubes and set aside.
- We peel the prawns, reserve the bodies and in a saucepan with water we boil the shells to make the fumet.
- We cut all the vegetables into not too small cubes and the carrot into slices.
- We cover the bottom of our saucepan with olive oil, sauté the onion and leek.
- Once golden, add the choco and stir for 3-4 minutes.
- We add the rest of the vegetables, the carrot, the red pepper and the pumpkin. Sauté well until they are somewhat tender.
- While we prepare the sauce, cut the potatoes into cubes that are not too large or to taste.
- Add the potatoes to the sauce, stir everything until mixed and then add the fumet until covered. We check the salt level, add if necessary.
- We leave it to cook over medium heat, once the potatoes are tender, it will take approximately 20 minutes, we remove it from the heat and serve.
