Gnocchi with spinach and dried tomatoes

Gnocchis con espinacas y tomates secos

Pasta in a pan? Well yes, and with just one pan you have a delicious pasta ready with very Christmassy colors for these dates. So take advantage and prepare these Gnocchi for those meetings that are so abundant now. Here we leave you the recipe for a creamy, tasty pasta that will conquer many palates.

Ingredients :
500 gr of gnocchi
70 gr Spinach
30 gr dried tomatoes
4 cloves of garlic
400 ml of coconut or vegetable cream
Pepper EVOO


  1. We soak the dried tomatoes in hot water for about 10 minutes.
  2. While we peel and chop the garlic
  3. In a frying pan we add a splash of oil and add two garlic cloves and the gnocchi. We fry
    a few minutes
  4. We remove the garlic and gnocchi d from the pan.
  5. Strain the tomatoes, cut them to taste and add them to the pan along with the other two.

  6. Add the cream, a touch of salt and pepper and bring to a boil. We let it boil for 2/3 min and

  7. Let it boil for another 2/4 min and optionally add grated mozzarella cheese on top.
