We hope you like it and enjoy this traditional stew. You already know that we love traditional flavors and slow cooking.
Ingredients: 4 people- 400g fideuá type noodles
- 1 onion
- 1 leek
- 1 green pepper
- The tip of a red pepper
- 10 shrimp or prawns
- 1/2kg of clams
- 2kg swordfish
- 1 tablespoon tomato concentrate
- Extra virgin olive oil
- We chop the vegetables.
- We put Mineral olive oil in our tall saucepan , cover the bottom, and sauté the vegetables until they are poached.
- While our sauce is cooking, we peel the shrimp, reserve the bodies and put the shells in another tall Mineral saucepan filled with water. We leave it on medium heat so that our smoke is made.
- Once our vegetables are ready, we add the pieces of swordfish and the concentrated tomato, sauté for a few minutes until they take color.
- Add the noodles, stir to mix with the vegetables and then cover with the previously strained smoke. We test to see if it needs salt and add if necessary.
- We let it cook over medium heat for about 7-9 minutes depending on the time recommended by the manufacturer. If during cooking we see that it needs more liquid, we add more smoke or a little water.
- About 3-4 minutes before the end of cooking we will add the shrimp and clams, this time will be enough to
that they are done perfectly.
- We check that the noodles are ready, remove from the heat and serve.
