Quinoa is one of the most important grains of the Andes. It is rich in protein, iron and magnesium. It has a pleasant flavor and its texture is smooth. Today we bring you a delicious black quinoa salad that you are sure to love.
Ingredients: 2 people
- 160g black quinoa (you can use white quinoa)
- 1/2 cucumber
- 8-10 green asparagus
- 50g feta cheese
- 1/2 red onion
- Juice of half a lemon
- Extra virgin olive oil
- Salt
- fresh cilantro
- We wash the quinoa with plenty of cold water, leave it under the tap and let it wash well. This is done to eliminate saponin, a substance it contains and in large quantities can be poisonous.
- We put plenty of water in our chef saucepan and cook the quinoa for 20-25 minutes. Black quinoa takes a little longer than white, so if you decide to make this one, about 15 minutes will be enough.
- For the vinaigrette, we mix the lemon juice, olive oil, salt and a little fresh cilantro. We stir well to mix and emulsion and leave aside.
- Once our quinoa is ready, we put it under cold water to stop the cooking.
- On the Mineral grill we sauté the asparagus with a little olive oil. Previously we have cut the whitest part to leave the tip or the greenest part.
- Chop the red onion and cut the cucumber into very thin slices.
- In a bowl or salad bowl, place the quinoa, crumbled feta cheese, chopped red onion, cucumber slices and sautéed asparagus.
- We dress with the vinaigrette and decorate with fresh chopped cilantro.
