Black quinoa salad

Ensalada de quinoa negra

Quinoa is one of the most important grains of the Andes. It is rich in protein, iron and magnesium. It has a pleasant flavor and its texture is smooth. Today we bring you a delicious black quinoa salad that you are sure to love.

Ingredients: 2 people

  • 160g black quinoa (you can use white quinoa)
  • 1/2 cucumber
  • 8-10 green asparagus
  • 50g feta cheese
  • 1/2 red onion
  • Juice of half a lemon
  • Extra virgin olive oil
  • Salt
  • fresh cilantro

  1. We wash the quinoa with plenty of cold water, leave it under the tap and let it wash well. This is done to eliminate saponin, a substance it contains and in large quantities can be poisonous.
  2. We put plenty of water in our chef saucepan and cook the quinoa for 20-25 minutes. Black quinoa takes a little longer than white, so if you decide to make this one, about 15 minutes will be enough.
  3. For the vinaigrette, we mix the lemon juice, olive oil, salt and a little fresh cilantro. We stir well to mix and emulsion and leave aside.
  4. Once our quinoa is ready, we put it under cold water to stop the cooking.
  5. On the Mineral grill we sauté the asparagus with a little olive oil. Previously we have cut the whitest part to leave the tip or the greenest part.
  6. Chop the red onion and cut the cucumber into very thin slices.
  7. In a bowl or salad bowl, place the quinoa, crumbled feta cheese, chopped red onion, cucumber slices and sautéed asparagus.
  8. We dress with the vinaigrette and decorate with fresh chopped cilantro.
