My grandmother, one of the best cooks I have ever known, had several specialties, among which croquettes and fried milk stood out. Today we cook “ham croquettes”, my grandmother's recipe.


  • ½ l. whole milk
  • 200 ml of stew or meat broth
  • 1 medium onion
  • 250 g finely chopped serrano ham
  • 1 tablespoon butter
  • 2 tablespoons extra virgin olive oil
  • 5 tablespoons of flour
  • 1 tablespoon cornstarch
  • Salt and nutmeg (to taste)
  • Breadcrumbs and 2 eggs to coat the croquettes
  • Extra virgin olive oil (frying)
